My favorites for summer:
Green Goddess Salad
I love the green goddess salad from Panera and found that it was actually really easy to recreate. The only thing that was kinda hard to find was the pickled onions, so I called over to Panera, talked to the manager, and was told I could buy a "side order" of the onions.
Ingredients:
- Mixed greens ($3.16)
- pickled onions ($5.00)
- 5 boiled eggs ($3.99)
- bacon bits ($1.79)
- Avocado ranch dressing ($2.19) (I didn't add avocado's because they would not last the whole week)
It is super easy to put together and tastes identical to the one at Panera. This costs around $16 for the whole week and is only 4 points on weight watchers.
Spaghetti pasta salad
This one looked and tasted like summer, I love pasta salad in the summertime and it was a fun twist to have it with spaghetti. I used gluten-free spaghetti so my mom could eat it too and that was a little hard to twist and pick up combined with the Italian dressing. I would like to try it with regular spaghetti to see if there was a difference.
Ingredients:
- Pasta ($1.39)
- Reduced-fat Italian dressing ($4.04)
- Cherry tomatoes ($3.99)
- Green peppers ($0.50)
- Red onion($0.50)
- Cucumbers($0.50)
- Ham (I forgot the salami) ($2.50)
This meal prep costs around $13.50 for the whole week of meals. This meal prep is only 7 points on weight watchers.
Protein box
I really like the protein boxes and a lot are inspired by the ones from Starbucks but I put my own items inside to what I'm feeling like for the week. I actually made this one this week for my lunch.
Ingredients:
- Meat roll-ups (Turkey and ham) ($4.50)
- Weight Watchers cheese sticks ($4.87)
- Simply 7 hummus chips ($4.39)
- Pickles ($3.89)
This meal prep costs around 17$ and is only 7 points on weight watchers. This meal prep is a little more expensive but it's definitely a more filling one.
